Thyme Honey: What It Is, Where It Comes From
Thyme honey is a monofloral honey: one gathered mainly from the nectar of thyme in bloom, and carrying that plant’s character in its colour, aroma and taste. In Greece — the country most associated with it — the honey draws on a variety of thyme species; on Crete, the key source is wild conehead thyme, a low shrub that flowers in the hottest, driest weeks of early summer. Thyme honey is honey produced when bees forage predominantly on flowering thyme; in Greek practice the name is reserved for honey that carries at least a set minimum share of thyme pollen.
What plant does thyme honey come from?
On Crete, mostly wild conehead thyme. Its accepted botanical name is Thymbra capitata (L.) Cav., in the mint family (Lamiaceae), but the same plant has been classified under several names, and you will meet all of them in honey research and on labels: Coridothymus capitatus, the name much of the melissopalynology literature uses, and Thymus capitatus before that. The NCBI taxonomy register lists both as synonyms of Thymbra capitata, in a chain of names reaching back to the one Linnaeus gave the plant in 1753. It is a compact, cushion-forming shrub of dry, rocky Mediterranean hillsides, and unlike many aromatic plants it holds its flowering back until early summer, blooming as the landscape dries out.
Thyme honey is not one plant’s honey everywhere, though — or even everywhere in Greece: the European reference sheets for unifloral honeys record Greek thyme honey as a whole drawing on a variety of thyme species and their Lamiaceae relatives. The same sheets record that Italian thyme honey comes mainly from Thymbra capitata, while Spanish and French thyme honeys come mainly from common thyme, Thymus vulgaris — a different species with a different nectar, giving a recognisably different honey.

Where is thyme honey produced?
Greece is the centre of gravity: thyme honey is produced across the mainland and, above all, on the islands, with Crete the largest of them. The European reference sheet records Greek thyme honey drawing on a variety of thyme species and their Lamiaceae relatives, with pollen shares that vary widely from sample to sample; on Crete, conehead thyme is the key species — the island’s PDO specification, covered below, requires its pollen in every sample. Beyond Greece, the reference sheets name Italy, Spain and France as producers.

Crete’s standing in this map is formal as well as reputational. Since 2017 the EU register of protected designations of origin has included Pefkothymaromelo Kritis — a natural Cretan blend of thyme honey and pine honeydew — and the name was carried over onto the UK’s own protected food names register at the end of 2020. The specification published in the EU register names conehead thyme as the island’s key nectar species and requires at least 10% thyme pollen in every sample. What does thyme honey taste like?
The honest answer comes from the European descriptive sheets, which compiled sensory panels and laboratory data on 308 thyme honey samples, most of them Greek and Italian. They record a colour of medium to dark intensity — the reference mean is 53 mm on the Pfund scale — a medium-intensity nose, and an aroma of medium to strong intensity described as woody, fresh and floral. Sweetness and acidity are both medium, and bitterness is absent. Thyme honey’s free acidity and proline sit at the high end of the unifloral range, and its diastase values are high — a laboratory profile that helps separate it from other varietals.
Character within the varietal still varies. Species, island, weather and the surrounding scrub all move the needle, which is why a Cretan thyme honey and a Spanish one are honestly sold under the same name while tasting like different places.
Why is thyme honey slow to crystallise?
Because of its sugar balance. Glucose is the sugar that forms crystals, and thyme honey carries comparatively little of it: the European reference data records a mean of 42.4 g fructose against 30.3 g glucose per 100 g — a fructose-to-glucose ratio of about 1.4, where a fast-setting honey such as dandelion sits near 1.0. How does a honey qualify as “thyme honey”?
Two layers of rules apply. UK honey law — the Honey (England) Regulations 2015 and its parallels elsewhere in the UK — allows a floral or vegetable name only where the honey comes wholly or mainly from that source and shows its sensory, physicochemical and microscopic characteristics. The verification tool is melissopalynology: microscopic identification and counting of the pollen grains a honey contains.
The UK sets no numerical pollen threshold, but Greece does. A 2004 decision of the Greek Higher Chemical Commission fixes minimum pollen percentages for Greek monofloral honeys, and for thyme the floor is 18% — Italy’s guideline figure is 15% by comparison. Greek decisions also set laboratory identity checks, including electrical conductivity below 0.6 mS/cm for thyme honey. Thyme pollen representation varies widely between genuine samples, which is why the pollen count is always read together with the sensory and laboratory profile rather than in isolation. How do you read a thyme honey label in the UK?
- Origin. The country of origin must be stated. “Blend of non-EU honeys” is a legal label, but it is not an origin — a producer who names the island or region is making a checkable statement.
- The varietal name. “Thyme honey” on a UK label is a legal claim that the honey is wholly or mainly from thyme. It is fair to ask a seller what that claim rests on — pollen analysis, laboratory profile, or nothing.
- Harvest year. Not required by law, but a stated harvest year ties the jar to a season and a place. Its absence can mean blending across years.
- Per-batch figures. UK law caps HMF at 40 mg/kg and requires diastase activity of at least 8 on the Schade scale. A producer who publishes these per batch is evidencing the legal standard rather than asserting it — and per-batch evidence is the only defensible basis for the word “raw”, as our guide to raw honey explains.
What did ancient writers say about thyme honey?
The reputation is old. Strabo, the Greek geographer writing around the turn of the first century, records in his Geography (Book 9) that Mount Hymettus, near Athens, “produces the best honey” — and Hymettus’s dry slopes are thyme scrub, which is why the famed honey of Hymettus is classically counted a thyme honey. Two safety facts
Honey is not suitable for infants under 12 months: the NHS advises against giving any honey to babies under one year, because it occasionally contains bacteria that can produce toxins in a baby’s intestines, causing infant botulism. And bee products, honey included, are allergens for some people.

Greece goes further and sets a numerical floor for its own market: at least 18% thyme pollen for the monofloral label, under a 2004 decision of the Greek Higher Chemical Commission.
Is all thyme honey the same?
No. The name tells you the nectar source, not the flavour. In Italy the dominant source is conehead thyme (Thymbra capitata); Greek thyme honey draws on a variety of thyme species, with conehead thyme the key species on Crete; in Spain and France it is mainly common thyme (Thymus vulgaris). Different species on different landscapes give recognisably different honeys.
Can babies have thyme honey?
No. The NHS advises that no honey of any kind is given to children under 12 months, because honey occasionally contains bacteria that can produce toxins in a baby's intestines, causing infant botulism. This applies to every honey, whatever the varietal and however it was handled.
