Raw Honey vs Manuka: What Each Word Actually Means

“Raw” and “manuka” answer two different questions. Raw describes process — how the honey was handled between the hive and the jar; manuka describes floral source — honey made mainly from the nectar of one plant, Leptospermum scoparium, chiefly in New Zealand. A jar can be both, either or neither, and neither word implies the other. This guide sets out what each term means, what the numbers on a manuka label are counting, how New Zealand defines manuka for export, and what a buyer of each is actually paying for.

Raw honey is honey that has not been pasteurised or fine-filtered after extraction; manuka honey is honey made predominantly from the nectar of Leptospermum scoparium, the mānuka tree.

What does “raw” mean on a honey label?

Raw is a claim about handling. Honey leaves the hive finished; what happens next — how warm it gets during extraction and bottling, and how finely it is filtered — is what the word is describing. UK law defines no “raw” category; what it does set, in the Honey (England) Regulations 2015, are compositional limits on the two markers laboratories use to detect heating — hydroxymethylfurfural (HMF) and diastase, which rise and fall respectively when honey is heated or stored badly. With no legal category to lean on, a raw claim is only as good as the evidence behind it — our own standard is to hold each batch to those limits and publish the results per batch. What does “manuka” mean?

Manuka is a claim about flowers, not handling. Leptospermum scoparium grows across New Zealand, and because the word commands a premium, New Zealand has given it a legal edge for export. The Ministry for Primary Industries (MPI) defines manuka honey by five attributes: four nectar-derived chemicals — 2′-methoxyacetophenone, 2-methoxybenzoic acid, 4-hydroxyphenyllactic acid and 3-phenyllactic acid — each at set minimum concentrations, plus a DNA test that must detect mānuka pollen. The 3-phenyllactic acid level splits the grades of the name: monofloral manuka requires 400 mg/kg or more, multifloral between 20 and 400 mg/kg. Honey leaving New Zealand labelled manuka must pass all five.

That definition is worth pausing on: it is a chemical and DNA fingerprint of origin. It says nothing about how the honey was handled afterwards — an MPI-passed manuka can still have been heat-processed and fine-filtered before bottling.

Can a honey be both raw and manuka?

Yes — and either, and neither. The two words sit on independent axes, so UK shelves hold all four combinations: raw manuka, processed manuka, raw varietal honeys that have nothing to do with Leptospermum, and processed blends that are neither. Read the claims separately. For the floral claim, look for the export definition and a grading licence; for the raw claim, look for a processing statement backed by per-batch numbers. Neither claim stands in for the other, and paying for one does not buy you the other.

What do the MGO and UMF numbers measure?

Both put a number on composition.

MGO is the literal one: milligrams of methylglyoxal per kilogram of honey. Methylglyoxal is not gathered ready-made by the bee — it forms in the honey during storage from dihydroxyacetone (DHA), a compound present in mānuka nectar. Adams and colleagues showed in 2009 that freshly produced manuka honey holds high DHA and little methylglyoxal, and that the conversion proceeds as the honey is stored. So MGO 100 means 100 mg of methylglyoxal per kilogram was measured; MGO 500 means 500. A bigger number means more methylglyoxal in the jar.

UMF (Unique Mānuka Factor) is a grading licence rather than a single measurement. It is administered by the UMF Honey Association, a New Zealand trade association. The grade number is indexed to methylglyoxal content and sits on top of assays for other marker compounds — leptosperin (so far identified only in mānuka nectar), dihydroxyacetone and HMF. Grades run from UMF 5+ upwards, a product must pass the association’s tests before it can carry the mark, and only licensed members may print it. A higher UMF grade, like a higher MGO figure, tells you the honey carries more methylglyoxal.

No prices are quoted here because retail prices move; the structure is what lasts. With graded manuka, a large share of the price is the paperwork made honest — the assays, the grade, the licence, the export test — layered on top of a genuinely scarce crop. With a raw varietal honey, the price carries the flower, the handling and the published batch results. Neither premium is fake; they are premiums for different things, and it is worth knowing which one you are choosing to pay.

How do they compare on the spoon?

Descriptively, they sit at different points of the strong-flavoured end of the honey shelf. Manuka is typically dark amber, thick and slow-moving, with an earthy, faintly bitter-edged flavour. Cretan thyme honey is amber, intensely aromatic and herbal, with the savoury edge that makes it a kitchen honey in Greece — poured over yoghurt and cheese rather than reserved for the spoon. Why does authenticity matter for both?

Because more manuka has been sold than exists. Trade reporting in 2013 put annual New Zealand production at about 1,700 tonnes against roughly 10,000 tonnes sold worldwide as manuka — around 1,800 tonnes of it in Britain, more than the entire genuine harvest, on one national market. The MPI definition exists precisely because a premium name invites imitation at industrial scale.

Two notes that apply to any honey

Honey of any kind — raw, manuka, graded or not — is not suitable for infants under 12 months, because honey can contain bacteria associated with infant botulism; NHS guidance is to give no honey before one year. Bee products are also allergens for some people. Neither point varies with grade, price or floral source.

What does the MGO number on a manuka label mean?

Why does manuka honey cost more than other honeys?

Scarcity and certification. The mānuka bloom is short, harvests vary year to year, global demand exceeds New Zealand's production, and a graded jar carries the cost of laboratory assays and a grading licence. Trade reporting has recorded more honey sold worldwide as manuka than New Zealand produces, which is why that certification chain exists.
