Bee Pollen UK: A Buyer's Guide to Granules & Capsules
Bee pollen is sold in the UK as a food, in three main formats: loose granules (dried or fresh-frozen), capsules, and pressed tablets. Granules let you judge the product with your own eyes — colour, pellet size and drying quality are all visible — while capsules and tablets are measured doses of ground pollen sold under UK food-supplement labelling rules. Before buying, check three things: where and when the pollen was harvested, how it was dried, and whether the seller publishes batch test results.
Bee pollen is flower pollen that forager honey bees have moistened with nectar and gland secretions and packed into pellets on their hind legs; beekeepers collect it in a trap at the hive entrance before it enters the hive.
How is bee pollen collected?
Bee pollen is collected with a pollen trap — a screen fitted at the hive entrance with openings just large enough for a bee to squeeze through. As returning foragers push through, the edges of the screen scrape the pollen pellets from their hind legs into a collection drawer below.
Traps only ever take a share. Field studies report trap efficiencies from roughly 3% to a little over 40% of incoming loads, and beekeepers fit traps intermittently so the colony keeps most of what it gathers. The drawer must be emptied frequently — daily in warm weather — because fresh pollen is moist and spoils quickly. What happens in the hours after emptying, freezing or drying, decides most of the quality of what ends up in your jar.
Granules, capsules or tablets — which format should you buy?
Buy granules if you want to see what you are getting; buy capsules or tablets if you want a measured dose with no taste. All three start as the same raw material but differ in processing and in what the label must tell you.
- Granules are the whole pellets, cleaned and either dried or frozen. Everything about them is inspectable: colour range, pellet size, dust, smell.
- Capsules contain dried pollen that has been ground to a powder and filled into a shell — gelatine or plant cellulose (HPMC); check which, if that matters to you.
- Bee pollen tablets are powder pressed under heat and pressure with binders, and often coating agents. Read the ingredient list: tablets are rarely 100% pollen, and the pollen content per tablet varies widely between brands.
Capsules and tablets sold in measured daily doses are food supplements in law. In England, the Food Supplements (England) Regulations 2003 (with parallel rules in Scotland and Wales) require the label to carry the name “food supplement”, a recommended daily amount, a warning not to exceed it, a statement that supplements are not a substitute for a varied diet, and “keep out of reach of young children”. A bee pollen supplement missing these statements has been labelled carelessly — a useful early filter.

Fresh-frozen or dried — and what does drying temperature do?
Fresh pollen is moist enough to ferment or go mouldy within days at room temperature, so it is either frozen promptly or dried; dried granules dominate UK retail. Drying temperature is the single processing detail most worth asking about.
Commercial drying brings the moisture content down to below roughly 10%. Research on hot-air drying shows the trade-off plainly: higher temperatures dry faster, but they darken the pellets, and the pigments and aroma compounds that make each floral source distinct degrade more as the temperature climbs. Drying at or below about 40 °C keeps the colour closest to the fresh product, which is why careful producers hold that line and say so on the label. Freeze-drying removes water under vacuum at low temperature and comes closest of all to the fresh state, at a higher price.
A seller who cannot tell you the drying temperature is telling you something too.
What does the colour of bee pollen tell you?
Colour tells you floral source, and to some extent freshness. Each plant species yields pollen of a characteristic colour — yellows and oranges are common, but reds, purples, greys, greens and near-black all occur. A pellet is one bee’s load, gathered mostly from one species, so pollen from mixed wild flora arrives as a visibly multicoloured jumble, while pollen from a single crop is uniform.
Colour also shifts with heat and age: hard drying and long storage push granules towards a dull, even brown. A “wildflower” pollen that is one flat colour throughout deserves a question.
What does “organic” mean for bee pollen in the UK?
Organic certification for bee pollen is mostly about where the hives stand. Under the organic regulations retained in Great Britain (based on EU Regulations 834/2007 and 889/2008), nectar and pollen sources within a 3 km radius of the apiary must consist essentially of organically produced crops, wild vegetation, or crops managed with low-environmental-impact methods. Hives must be made of natural materials, and colony treatments are restricted. Certification is issued by a Defra-approved control body — Soil Association and Organic Farmers & Growers among them.
Because bees cannot be fenced, few sites qualify, and genuinely certified organic bee pollen is scarce; much of it comes from remote regions abroad. Two practical notes. First, an “organic” label should carry the certifying body’s code — no code, no certification. Second, certification describes the foraging area, not the drying or handling: uncertified pollen from an isolated area can be handled better than certified pollen dried hard. Ask about both.
How do you choose a good bee pollen?
Judge a bee pollen on origin, drying, packaging and testing — in that order. A short checklist:
- Origin. Country at minimum, region ideally. Single-origin pollen from a named harvest tells you more than a blend. If origin is not on the label, ask; if the seller does not know, walk away.
- Harvest. Pollen is seasonal. A seller should know the harvest year of the batch on the shelf.
- Drying. Fresh-frozen, freeze-dried, or air-dried below about 40 °C are the answers that show care. “Dried”, with no detail, is not an answer.
- Packaging. Airtight and ideally opaque. Dried pollen picks up moisture from the air, and light fades it.
- Testing. Bees forage over open countryside, so pollen carries whatever the landscape carries; residue and heavy-metal testing is how a producer demonstrates what is — and is not — in a batch. Ask whether results are published per batch, not as a one-off. How should you store bee pollen?
Keep dried granules airtight, cool and dark; keep fresh-frozen pollen frozen. Dried pollen’s enemy is moisture: reseal the container properly after each use and store it away from the steam of a kitchen hob. Refrigeration after opening extends its life, and dried granules can be frozen without harm. Fresh-frozen pollen should go straight back into the freezer after portioning — treat a thawed batch like any thawed food and do not refreeze it. In all cases, respect the best-before date and buy quantities you will actually finish.
How do you actually eat bee pollen granules?
Sprinkle granules over yoghurt, porridge or a salad; soak them in milk, juice or water for ten to fifteen minutes if you prefer them soft; or grind them to a powder in a spice grinder. If you paid for low-temperature-dried pollen, adding it to hot cooking undoes the colour and aroma you paid for — use it on or in things that are already off the heat.
As for what to expect: dried granules are firm and slightly chalky, with a taste that starts floral-sweet and finishes bitter and powdery; fresh-frozen pellets are soft and milder. Both vary noticeably with floral source — pollen from Cretan thyme country tastes nothing like a rape-field harvest, which is half the interest.
Allergy warning — read before you buy
Bee pollen can cause allergic reactions, including anaphylaxis. Documented reactions include people with existing pollen allergies (hay fever), people with asthma, and people who have reacted to bee stings or other bee products — and reactions have occurred on first exposure and at small amounts. Do not give bee pollen to infants. If you have a known pollen or bee-product allergy, do not eat bee pollen without first speaking to your doctor. If swelling of the mouth or throat, difficulty breathing or faintness follows eating it, seek urgent medical help.

What does bee pollen taste like?
Floral and mildly sweet at first, with a bitter, powdery finish. The taste varies strongly with the flowers the bees were working, so pollen from different regions and seasons tastes noticeably different. Dried granules taste more concentrated; fresh-frozen pellets are softer and milder.
Is bee pollen vegan?
No, by most definitions. It is collected from honey bees: foragers gather the pollen and a trap at the hive entrance takes a share of their loads as they return to the hive. It is an animal-derived product in the same sense as honey.
Can I eat bee pollen if I have hay fever?
Be careful. Bee pollen is made of plant pollens, and allergic reactions to eating it — including anaphylaxis — are documented in people with pollen allergies. Speak to your doctor before trying it rather than experimenting on your own. The same caution applies to anyone who reacts to bee stings or other bee products.
Why is my bee pollen lots of different colours?
