A small house with one idea.

Thymelia brings raw thyme honey and bee products from western Crete to the UK — bought as whole single-apiary harvests, never pooled stock, with each batch’s laboratory certificate published in full. We have no shop yet, and we are not naming a date for one.

What we believe

Honey is one of the most adulterated foods in the world, and “raw” is its least policed word. We think the answer is paperwork, not poetry: harvest dates, batch codes, coordinates, and test results in real units against the legal limits. If a claim cannot be evidenced per batch, we do not make it.

That extends to health. In Great Britain, food may only carry health claims from the GB register, and for bee products there are essentially none — so we make none, anywhere, and we publish that position. What is in the jar, where it came from, and what the laboratory measured: that is the whole pitch.

Who is behind it

Thymelia is a small independent house, not a brand front for a distributor. The guides on this site are written in-house by the people who buy the honey — no content agency, no ghostwriting — and they are published under the house name rather than a personal one. What holds them accountable is not a byline but the standard they are held to: composition, origin and process only, every figure traceable to a cited source.

Where things stand

We are pre-launch, and we would rather show you that than pretend otherwise. Producer visits in the Chania region are under way. Contracts, batch records and — once there is something real to photograph — original photography from the apiaries will appear here as they happen. Nothing on this site is stock imagery, and nothing is invented. We would rather publish no date than a date we might miss.
